MOCK POTATO SALAD
1 head cooked cauliflower
2 eggs- boiled
2 green shallots- chopped fine
1 stalk celery
1 cup DUKE’S MAYONNAISE
1 tbsp EXPERT FOODS NOT/STARCH
˝ tsp dry mustard
˝ tsp vinegar
salt- pepper to taste
1 tsp dill weed
Chop cauliflower into potato salad sized chunks and toss, while
warm add not/starch. After chopping add the eggs, cauliflower, celery,
onion, and dill weed. Combine all other ingredients in large bowl
and mix them. Chill.
