FAUX SWEET POTATOES
Casserole:
2 small cans Pumpkin Puree (not pumpkin pie filling)
2 eggs
2 T. STEEL’S BROWN NATURE SWEET CRYSTALS
4 T. melted butter
2 t. Pumpkin Pie Spice
Pinch of salt (to taste)
Topping:
½ cup ZamLows ALMOND FLOUR
2 T. butter, softened
Pinch of Cinnamon (to taste)
2 T. SPLENDA
Mix all ingredients together and put into a medium-sized, lightly
greased casserole dish. In a small bowl, mix together almond flour,
2 T. softened butter, cinnamon and Splenda. Cut together to form
small crumbs. Sprinkle on top of casserole. Bake at 350 degrees
until warmed through and the topping sets.
